Vegan Meal Prepping on A Budget!
Changes in nutritional habits can be anxiety provoking. Not only does it require a renewing of the mind, it also only works best when appropriate techniques have been established. One of the most effective techniques is meal prepping.
To serve as a guide, I’m going to walk you through my vegan meal prep routine. As someone who has meal prepped for the past two years, my hope is to prepare you for your next grocery store trip.
On my budget, I spend about $40 a week on groceries. My first step is to always create a grocery list. On your list, be sure to include a variety of whole foods such as grains, legumes, vegetables, and fruit! To aid in cost savings, find local deals in a newspaper or online to help determine what foods you may want to add. Once at the store, only pick up what you wrote and avoid any unnecessary food purchases. If you tend to overbuy because you’re hungry, eat before you go to the store. When finished with your shopping, head home and prepare to get to your cooking on!
Cook and Prep!
Though I typically grocery shop on at the end of my work week, I don’t start cooking until Saturday. As an example, last week I planned to make vegan lasagna and salad for dinner, veggie sandwiches with a side of fruit and tortilla chips for lunch, and a variety of foods such as oatmeal, smoothies, and chickpea flour frittatas for breakfast. With a set menu, I determined my cooking priorities.
Multi-tasking is my best tip for making meal prep less overwhelming. Because dinner is usually my most time-consuming prep, I start cooking that first. For my lasagna, as I made the tofu ricotta in the food processor, I simultaneously began sautéing kale and mushrooms. Once complete, I arranged the lasagna, with the noodles and sauce, and left it to cook in the oven for 50 minutes. During those 50 minutes, I got started on cooking breakfast and packing my snacks in baggies. When everything was finished, I put the Tupperware and pans in the refrigerator to rest and left them alone until Monday.
Sit Back & Chill!
Now that your meal prep is complete, sit back and relax! When Monday approaches, you can simply grab your food and go! Imagine the productive things you can do now that you’ve got some free time!
